Matt Hatala, founder of Prairie Rose Provisions, is a dedicated pork producer and regenerative farmer based in Osceola, Iowa. Through his work at Ancestral Farms, Matt raises Berkshire and Duroc hogs from the Hendricks Durocs meat quality reach-back program, focusing on heritage breeds prized for their exceptional flavor and texture. His deep commitment to sustainable agriculture and animal welfare ensures premium-quality pork while supporting the health of Iowa’s ecosystems.
Joining him as a partner in Prairie Rose Provisions is Justin Brunson, a celebrated chef, butcher, and charcuterie expert. Known for his innovative in-house charcuterie program at Denver’s renowned Old Major restaurant, Justin brings decades of experience in crafting artisanal salami and whole-muscle charcuterie. His expertise ensures that Prairie Rose Provisions delivers small-batch charcuterie of unmatched quality and flavor.
Together, Matt and Justin unite their skills and passion to create Prairie Rose Provisions, a vertically integrated charcuterie company that honors heritage breed hogs, regenerative farming practices, and the timeless craft of charcuterie.
